Spiralizer Salad

After my mom & I went to a Williams Sonoma cooking class for Mother’s Day, I got a spiralizer. It is my new baby. I love salads, but my mom grows a lot of fresh veggies that don’t include lettuce. Zucchini has had a good season this year, so this is my alternative! It’s fresh, healthy, & can be spiced up with cheese ?

It’s also simple enough I can make it on my lunch break or I can make it in the morning to take to work. I simply spiralize my zucchini, add a bit of olive oil (the one pictured is currently on sale!) and balsamic vinegar (the best!), add salt & pepper, and top with cheese.
